Smoked Prime Rib


Hey guys, I made smoked prime rib over the weekend and it turned out great.  This is a really easy recipe and it tastes really good.  I went to my local farmer’s market and got a really good steak rub.  It’s pretty easy to make and consists of Salt, Pepper, Minced Onions, Minced Garlic, Dry Mustard, and Thyme.  I rubbed down the Prime Rib and let it sit out for about 45 minutes to let it come to room temperature.  I scored the fat on the top to help it render more easily.

I preheated the smoker to 250F and put the prime rib in fat side up with a meat thermometer to make sure that it came out perfect.  I cooked it until it was 130F internally and let it rest for about 30 minutes on a tented platter.

The end result was a perfectly succulent prime rib and everyone loved it.  I think next time I might mince up some garlic and inject it into the prime rib.
