I have been experimenting more in the kitchen and I’d like to share some of the meals I’ve made. I had huevos rancheros in a restaurant in Jacksonville, Florida a few weeks ago and really liked it, so I looked up a few recipes and decided to create it myself. Also pictured in the corner is my son Oliver. Enjoy the added bonus.
For the recipe, I sliced up half a white onion, added 2 tablespoons of minced garlic and put that in a pan with some olive oil. I let that cook down for a few minutes then added a pound of ground beef. I seasoned the beef with some cumin, oregano, and parsley. After browning the beef, I added 2 cans of refried beans and let those melt down with some green chilies, a minced jalapeno, and some Rotel minced tomatoes. After letting that cook together for about 5 minutes, I added some salt to taste and cracked a few eggs into the pan and covered it to let the eggs cook fully. I crisped up a tortilla shell in another pan and served the beef and bean mixture with an egg on top onto the tortilla with some sliced avocado, fresh cilantro, and a little sour cream.
It’s a very easy dish to make, very filling, and really delicious.
